Having mentioned that I have never been much of a salad person in my ramblings on Sunday evening, and also having a huge container of baby greens in my fridge that needed using, I was inspired yesterday to make my favorite salad dressing… Ani Phyo’s Orange-Cucumber Dressing is simply amazing!
It’s in her Raw Food Kitchen book, which was my first raw (un)cook book and I really like it. I will include the suggested salad recipe as it is a great mix but I throw in whatever I have as I figure salads are so good for you they should be easy, and because for me it’s really all about the dressing :)
I love taking this for lunch – storing the dressing separately until I’m going to eat it obviously. I put on heaps of dressing so find that this recipe lasts me two servings, which works out well because I really only like the same thing for lunch two days in a row! Enjoy… and buy Ani’s book!

EVOO is extra virgin olive oil, sorry!! Look for organic, cold pressed EVOO…
