Labor Day brunch and a true labor of love worth every minute. Super-seasoned scrambled tofu, cashew crema, spinach, mushrooms, red peppers was simply a magical combination.

In what we hope will become a tradition of sorts, some friends and I organize weekend runs and follow up with brunch – I love brunch.

Today was our second installment and I hosted. In truly excited “ohmygosh, I have new people to cook for” fashion I raided my vegan cookbooks to find something not just that everyone would like, but that had the potential to wow everyone; I raided Whole Foods for fresh, organic ingredients; and I spent the better part of four hours in and out of the kitchen yesterday preparing – you need to make it the day before and then cook for 1 hour + sit it for 1 hour before eating it the day of.

The recipe comes from Joseph Shuldiner’s Pure Vegan cookbook and is waaaay too in-depth to recreate here, but if you’re into creating mind-blowing, exotic vegan dishes every now and then, I highly recommend you buy this one – you can flip through it on the Amazon link above. Beautiful pictures and gourmet recipes… everything is very, very tasty.

Honestly, after I finished cooking last night I said I would never make this again. However, after tasting it this morning… after the ‘wows!’… I definitely will be making it again – it was worth every minute. And surely things get easier after the first time, right?? Good food is always an investment : )

PS, The recipe calls for all-purpose flour – I simply substituted Bob’s Red Mill gluten-free flour and it worked a treat.

    • I love this recipe Joseph, made it again last weekend to share with friends and it’s worth every minute of fighting with short crust! Thank you for your amazingly beautiful book, it’s one of my favorites.
