Peach and Berry Smoothie

It is hot and overcast in Boston today with a 60% chance of thunderstorms… not a good day for a 4hr return trip to Six Flags, much to my disappointment – it is my birthday after all. After the initial disappointment I actually embraced a lazy day at home (with the exception of dinner at the most wonderful, expensive place I can find…), as I have just had a long week of intense on-campus study for my MBA and I’m exhausted.

That being said, it has been ages since I posted a recipe and I wanted a smoothie for breakfast, and I was getting sick of photos with green drinks in a glass. I love having criteria! I then went about fishing goodies out of the fridge for experimentation. The result, a multi-colored, fruity, filling concoction that is packed full of goodness ;)

Ingredients – makes one large breakfast-size serving for smoothie junkies, or two smaller ‘to share’ glasses

  • 12 frozen blackberries
  • 10 ripe strawberries
  • small handful raspberries
  • 1 tbls chia seeds
  • 1.5 cups filtered water
  • 2 ripe peaches
  • 4 leaves curly kale
  • 2-3 tbls hemp seeds

Instructions:

  • Blend berries and chia seeds in a blender until thick but smooth – add a dash of water if required
  • Empty into glasses and swirl around, it should stick to the glass
  • Blend remaining ingredients until smooth and gently pour or spoon on top of the berry puree
  • Garnish as desired
  • You could also just throw it all in a blender together if you are in a hurry or making it for yourself and not fussed about the pretty pink against green visuals

I’m sure you could use any berry combination you like, and chia seeds aren’t essential but are extremely good for you so a nice addition. Similarly, the hemp seeds aren’t essential but are a wonderful source of iron.
