Hurricane Irene is battering Boston today and we ventured out into the wind and rain this morning for a walk! I didn’t have breakfast before we left, so hungry and wet on our return, I whipped up some blackberry-kiwi juice for what is now lunch. It’s really yummy!!
I played with the quantities of ingredients a bit to use up what I had in the fridge and I used the core of the pineapple so the juice has a nice chunky texture which I find a little more filling. I would have preferred to use fresh coconut water but there was nowhere in this weather to get one so I used a pre-packaged one I had in the fridge, but as Scott Allen says… “done is better than perfect”.
Ingredients (1 serve)
Sounds yummy, especially the mint! Did you lose any power during the storm?
The mint was a great idea! I love whoever came up with this juice, it’s sooo good! And I was drinking it on the subway on my way home today after the gym and got into a serious discussion with two of the most unlikely looking guys about the benefits of juicing which made my day!
We got through Irene unscathed. Hope you did too!
When you say juice, you mean you put the fruit through a juicer and not a vitamix?
Yes, I used a juicer but I think it would also make a great smoothie if you wanted to blend it!
