Apple, Pineapple, Ginger

try your juice before you take it to work and rely on it for your daily sustenance! Especially if you have never tried it before :) The apple-beet-carrot combination didn’t really work for me. I don’t know what I did wrong – too much ginger or beet maybe?  Whatever the case, I couldn’t drink it and I had to have salad for lunch. I kept it ‘clean’ though – vegetables, no nuts, and a little cold-pressed EVOO. I did take 750ml of the cantaloupe juice for breakfast so still got in a lot of juice.

Another challenge I’m finding is my Invisalign. I would be more than happy to sit at my desk all day sipping juice but I can’t with the aligners in – damn vanity and wanting to have straight teeth :) I find it difficult to have a big glass in one go, clean my teeth, put my Invisalign back in and then stay satiated for long enough for the toothpaste taste to go away (it’s not good with juice!)

That aside, I’m determined to get through this week with as much juice as possible. Today I juiced another half dozen carrots to add to the juice I still have at work from yesterday, hoping that will make it edible (drinkable?) In addition, I strayed from the Reboot Your Life list and made a juice that I adore and haven’t had for ages: apple, pineapple and ginger.

Ingredients:

  • 1 ripe pineapple
  • 4 green apples
  • 1 inch ginger

Simple, sweet and juicy! What’s the point of life if you don’t enjoy it, right??

    ENERGY JUICE
    1 beet root
    4 carrots
    3 oranges, peeled/seeded
    6 apples, corded
    hand full of parsley, cut off stems
    4 large strawberries

    stir down any foam, makes almost two liters, stores up to 1 week

    as you drink, little hints of strawberries sneak in on top of the beet and parsley catches you at the oddest moments
