Sambazon Superfood Acai Pots

Today is the first ever National Açaí Bowl Day! I think this is just the cutest idea ever as I lurve açaí bowls – I became addicted after discovering them at a vegan food truck in Hawaii just before I jumped out of my first plane (which I also lurved!) so have very fond memories.

In celebration, I pulled together my first homemade version of an açaí bowl… but of course I had to put it in a pot, à la my chia seed breakfast pots. Pots are fun because you are reusing something, they are transportable, and they hold just the right amount. This is based on my most favorite smoothie recipe so it’s kinda cheating, but I’m enjoying eating it with a spoon.

Ingredients (two pots)

  • 1 ripe organic kiwi
  • 1 Sambazon organic açai acerola smoothie pack
  • 1 cups organic frozen berries
  • 2 ripe organic banana (save half of one for decoration)
  • 1 tbls chia seeds
  • 1 large handful of organic spinach
  • 1 tbls filtered water
  • Fresh berries
  • Cacao nibs

Instructions

Soften açai in warm water as per instructions on packet. Add ingredients to blender jug. Blend on high speed to get momentum – you may need to stop and stir as it’s kinda thick. Blend until smooth. Pour or scoop into pots and top with banana, fresh berries, and cacao nibs.

    • Me too, best thing ever! It was my first time making them and love it. Think this will be a new breakfast passion of mine. Would love any recipes you can recommend :)
