Chocolate Ice Cream Cake

Right or wrong, I always have chocolate on the brain on Easter Sunday. No more eggs hunts for me, but I am going to try and hunt down some egg-shaped avocados to remake this raw vegan chocolate ice cream cake this afternoon.

I first made this sometime last year and copied down the recipe but can’t for the life of me remember where I found the original (or find it again) so my most humble apologies to anyone out there to whom this sounds familiar… it is out of utmost respect and love that I share this with others :)


Bottom layer

  • 1 avocado
  • 2 bananas
  • 4 large, soft medjool dates (if they are a bit hard, soak in water overnight and pat dry before using)
  • 4 tablespoons cacao powder or cocoa powder
  • 1 teaspoon vanilla
  • Pinch sea salt

Top layer

  • 3 bananas
  • 4 tablespoons almond butter
  • Pinch sea salt


  • 1 avocado
  • 1 banana
  • 3 tablespoons cacao powder or cocoa powder
  • 6 large, soft medjool dates 
  • 1 teaspoon vanilla
  • Pinch sea salt
  • chopped cashews


  • Puree all ingredients for the bottom layer in a food processor with an “S” blade until it’s a creamy, pudding like consistency
    • Spoon into a 6″ in springform pan and place in freezer until firm
  • Puree all ingredients for the top layer, spread over the bottom layer and freeze
  • Once the layers are frozen, puree all ingredients for the frosting
    • Remove the cake from the pan and spread chocolate avocado frosting thickly over the top and sides.
  • Top with chopped cashews, or banana slices
  • Serve with soft frosting, or refreeze before serving
  • Store in the freezer – mine lasted about a week… it’s a lot of cake for one girls to eat!

I tried to make popsicles by layering the first two layers in popsicle containers but the chocolate doesn’t freeze hard enough to come out neatly so I made individual desserts instead… and the omnivore boyfriend gave it the official approval anyway! Love :)

    • finally…! I substituted each tablespoon of agave for one medjool date and it worked really well! You need really soft ones, or soak them over night…
