Throw-together Pasta

I couldn’t believe it… I had water boiling on the stove, in which to put rice noodles for stir-fry (not part of any detox that I know of!), and while rummaging through the fridge for vegetables I stumbled across a perfectly chunky zucchini and was suddenly overwhelmed with a desire for raw pasta! I can’t tell you how long it’s been since raw food was what I felt like vs. what I was pushing myself to eat. I guess the last two days of raw food have started to kick in!!

Given the last minute nature of my endeavors, this is not overly creative but it’s also not overly time-consuming or ingredient intensive.

Ingredients* (for 2)

  • 2 decent-size zucchini
  • 1.5 cups ripe cherry tomatoes – you can use any type but cherry make the most tasty sauces
  • 6 large basil leaves – try clapping these between your hands to release the aromas
  • 1 cup  broccoli florets
  • 1 spring onion
  • 1/4 cup sundried tomatoes
  • dates
  • 1 clove garlic
  • Splash of extra vergin olive oil (EVOO)
  • Himalayan salt, pepper and chili flakes to taste

Instructions
  • Soak dates in filtered water to soften
  • Peel zuchinni and then peeled into long thin strips or spiralized in a spiralizer (I bought one and tried it once before throwing it out in frustration but that’s another story!)
  • Place in dehydrator about 120° – the food won’t be in there long enough to overheat… this is a quick meal, remember!
  • Quarter .5 cup of tomatoes and mix with broccoli florets and 2 torn basil leaves in a tiny splash of EVOO and sprinkling of salt + pepper – add to dehydrator
  • Throw everything else in a blender and blend until chunky smooth – I think silky smooth is kind of boring but please do it you prefer it!
  • Place sauce in or near dehydrator to warm
  • I left everything in the dehydrator for ~20 mins
  • Serve as you see fit – blend it all together or layer it up!

Easy and tasty, thank goodness :)

  1. That looks like a great recipe, thanks for sharing! I want to buy a dehydrator soon because I can’t dehydrate… so I stick to the normal pasta zucchinis with a spiralizer :D.. But your recipe inspired my anyway thanks for that!
