spicy ‘salmon’ pâté

Mock Salmon Pate

The ultimate lazy snack has really got to be crackers and dip doesn’t it? Open cupboard, grab crackers. Open fridge, grab dip. Dip + Eat = Instant gratification. So when dehydrating your own raw flax seed crackers from scratch a sudden craving for a savory snack isn’t helpful, having ones pre-made (or being lucky enough to be able to buy them from somewhere) certainly is. As is having a few easy, tasty recipes on hand.

In all honesty, I haven’t been very experimental in the raw vegan dip/pate department but it’s not for lack of wanting, but for lack of needing – I love the first pate recipe a friend suggested (with some minor personal tweaking on round two) and haven’t really felt the need to expand my repitoire! For you new / wanna be raw foodies this salmon’ pâté is a staple and you’d be surprised at how, every so often, it does taste like salmon pâté! Although I do hate that we need to use animal terms to describe vegan food.

  • 2 cups cashews, soaked for two hours
  • 2 stalks of celery, chopped
  • 1 large red pepper, chopped into chunks
  • 1 large scallion, chopped
  • 1 tsp sea salt (or to taste)
  • And my personal tweak: cayenne pepper! I found it a little bland the first time I had it so put in a little to pep it up and it works a treat :)

  • Drain cashews and place in blender – blend until smooth
  • Add celery, red pepper, scallion and blend
  • Season with sea salt and cayenne pepper to taste.

Store in an airtight container for 3-4 days. Easy, tasty, snacky-treat :)
