Fruit Leather

It’s Sunday night, and Sunday night is fruit leather night. Every week I make a load of these things and my partner (an avid omnivore) devours them by Wednesday… he’s addicted. And while I used to get grumpy about him eating them all so quickly, I have learnt two things: 1. it’s a good idea to stash away what I want to eat before he sees it, and 2. it’s better he eats these than having him running around on a sugar high from Roll-Ups – a Christmas gift I was not so happy about :)

A little note: while these are easy to make, you will need a decent blender to get the fruit smooth – my Blendtec on the ‘whole juice’ does a magical job.

  • 2 red apples – use clean, crisp apples, not soft mushy ones
  • A container of strawberries, or raspberries, or two ripe pears, or a large bunch of grapes (I love concord grapes but I think they’re a New England thing), or whatever else tickles your fancy! It’s worth experimenting, and some people would say I’m being lazy in using apple as a ‘filler’ but I like how it mellows out the flavor.

  • Dice the apples and prepare the other fruit
  • Add the softest fruit to the blend first and put the apples on top
  • Blend until smooth
  • Spoon on to teflex dehydrator sheets in long thin strips (or whatever other shape you like)
  • Dehydrate for 9 hours on 105°F
  • Peel off and store in an airtight container – I’m not sure how long they last because they never last more than four days around here, but have heard they last a long time!

I find two batches fills up my five try dehydrator, making approx 50 strips.

When I was home in Australia over Christmas, I even made a batch for my mum in her oven. I put them on baking paper on baking trays and put them in the over on the lowest possible temp for 4 hours.
