You don’t have to look far for reasons as to why commercial bread is not good for you… bromide (well in the US anyway, everywhere else banned it in the 90’s!), artificial preservatives, emulsifiers, additives, bleached flour which removes the goodness to make it ‘soft’ then they pump artificial goodness back in(??), SUGAR… The list goes on.
I first tried cutting back on bread a few years ago when I hypothesised that my falling asleep in business meetings after lunch (funny but very true), might be related to all the gluten I was eating in sandwiches and pastas. I stopped for a while and it worked… no more nodding off in front of clients, my hay fever (unexpectedly) cleared up, and I felt much lighter as a result. The thing was though, that I had become so good at pretending feeling full and bloated was an indication that I was full, that the gluten-free thing didn’t really last long… salads didn’t cut it!*
Yes, I realize I used to practice insanity so regularly it makes me blush.
After I had had enough of the insanity early last year, decided to go raw vegan and bought my (most wonderful, fabulous) Excalibur dehydrator, I made raw bread! I was happy-dancing, bum wiggling around the kitchen like nobody’s business. Glorious, raw, unprocessed, utterly natural bread. Magnificent! And while I know not everyone is going to run out and buy a dehydrator (particularly my friends in London where you couldn’t fit one of those things in your kitchen unless you remove the fridge), it’s worth it, even if only for the bread.
So the reason I’m writing this post today, is because I have been sneaking a few pieces of my boyfriend’s bread to make toast with avocado in the last week of so and despite how much I lurve real toast, the smell, the crunch, the softness, the effects are immediate! Sniffles, tired, and honestly, a little constipated… ewwww. I need to make a new batch of raw bread! I have tried a lot of varieties, and my favorite is Ani Phyo’s Black Sesame Sunflower Bread.

* Historically, I was definitely not a salad lover! In fact, boys used to say that I was a good date because I was thin but had a voracious appetite, enjoyed a medium rare steak as much as they did and never ordered salad. Ahh… those were the days. The current boy would paint a very different picture with my new finicky dietary requirements, poor thing.
